Ingredients:
  • Honey Butter Glaze
  • 1 cup local honey
  • 8 oz. unsalted butter
  • 2 oz. sugar
  • Juice from 1 lemon
  • Caramel Ice Cream Base (make a day early)
  • 10 oz. whole milk
  • 4 oz. heavy cream
  • 4 oz. sugar
  • 6 each egg yolks
  • 1 oz. sugar
  • Walnut Crumb Mixture
  • 4 oz. unsalted butter
  • 1 cup brown sugar
  • 1/2 cup chopped walnuts
  • 1 cup all-purpose flour
  • Apple Chips (make a day early)

  • 1 Granny Smith Apple
  • 4 oz. sugar
  • 4 oz. water
Directions:
  1. Honey Butter Glaze
  2. 1. Bring ingredients to a boil in a small saucepan. Set aside.
  3. Caramel Ice Cream Base (make a day early)
  4. 1. Bring the milk and heavy cream to a boil in a saucepan.
  5. 2. Cook 4 oz. of sugar to a dark caramel stage.
  6. 3. While whisking slowly, add the hot cream and milk mixture to the caramelized sugar.
  7. 4. Whisk the egg yolks and 1 oz. sugar together.
  8. 5. While whisking, add half of the hot milk mixture to the eggs.
  9. 6. Return the mixture to the pot of milk and stir.
  10. 7. Cook until the mixture coats the back of a spoon.
  11. 8. Strain the mixture and chill in an ice bath.
  12. 9. Refrigerate overnight.
  13. 10. Churn the ice cream using ice cream machine instructions.
  14. Walnut Crumb Mixture
  15. 1. Cream the butter and sugar together until light and fluffy.
  16. 2. Add the flour and chopped walnuts and mix. Set aside.
  17. Apple Chips (make a day early)
  18. 1. Slice a Granny Smith apple thin on a mandolin or slicer.
  19. 2. Bring the sugar and water to a boil.
  20. 3. Blanch the apple chips in the sugar syrup for 15 seconds and remove.
  21. 4. Lay apple chips on a greased sheet pan and dry in a 200 degree oven for 20 minutes or until crisp.
  22. Plating
  23. 1. Set an oven to 375 degrees.
  24. 2. Wash, peel and core the Granny Smith apples.
  25. 3. Fill the apples with the walnut crumb mixture and put in a baking dish.
  26. 4. Pour the honey glaze over the apples and place in the oven.
  27. 5. Baste the apples with the glaze every ten minutes and bake for 20-25 minutes until a knife pierces easily.
  28. 6. Remove from the oven, place on a plate and serve with a scoop of ice cream and an apple chip.
