  • Apple Crostata Dough
  • 1/2 cup all purpose flour
  • 1/8 tsp. salt
  • 3 Tbsp. shortening
  • 1 to 2 Tbsp. cold water
  • Apple Crostata Mixture
  • 2 Tbsp. sugar
  • 2 Tbsp. packed brown sugar
  • 2 1/4 tsp. all purpose flour
  • 1/4 tsp. ground cinnamon
  • 3 pinches ground ginger
  • 3 pinches ground nutmeg
  • 1 3/4 cup peeled and thin sliced gala apples
  • 3/4 tsp. fresh lemon juice
  • 1 oz. unsalted butter
  • As needed sugar for sprinkling on top
  • Apple Crostata Dough
  • 1. Mix all dry ingredients in a bowl.
  • 2. Cut the shortening into small pea sized shapes.
  • 3. Mix in 1 tablespoon of water at a time, folding the mixture over top of itself to form a dough.
  • 4. If too dry, add a teaspoon of water at a time until the mixture comes together.
  • 5. Be careful not to overwork the dough or it will become tough.
  • 6. Divide the dough into 2 equal portions and flatten out.
  • 7. Chill for at least 20 minutes.
  • 8. Roll the dough into 6 inch circles and divide the apple mixture into each circle (recipe to follow)
  • Apple Crostata Mixture
  • 1. Combine the first 6 ingredients together in a bowl.
  • 2. Toss the apples slices with fresh lemon juice and then add the above mixture, coating the apples well.
  • 3. Divide the mixture evenly onto the prepared 6 inch dough rounds on a parchment lined sheet tray, placing the mixture in the middle.
  • 4. Fold up the dough over the apple mixture, making pleats with the dough to form the tart.
  • 5. Sprinkle with sugar and place 1/2 oz. of butter in dots across each tart.
  • 6. Bake at 375 degrees for 20 minutes and then finish in a 400 degree oven for another 8 minutes or until golden brown and apples are tender.
  • 7. Pull Crostata from the oven and allow to cool at room temperature.
